Okay, so - Karen seems to have a bit of an aversion to religion. That comment about her parents seems to indicate some bad memories, and rebellion, a difficult relationship and possibly assigning some blame on her parents' faith... that part really annoys me in real life, but what can you do. Anyway, no, she really doesn't seem like the "leave it to God" type of person :)
As for Matt - I think his faith is the basic feature that keeps him from becoming the Punisher after his "one bad day". I wish this struggle between "the Catholic" and "the vigilante" was shown more clearly in s. 2.
