Black parts of the costume could maybe deflect bullets, red parts from knives and lesser weapons. Or the black parts deflect bullets and knives and the red parts just protect from punches. It's in the last episode, I think, just before Matt goes to fight Fisk for the final time.
Since most of the costume is red, he could get shot in one of the red parts including the face. He would still be vulnerable to a lot of bruising, I imagine. Less vulnerable to head injuries. And you could probably still stab through the costume if you came at it from the right angle- probably by stabbing upward into the armor instead of downward where it could glance off.
I'm not a medical expert by any means, so I hope that someone else chimes in!
